  1. Begin by preheating canola oil (2 quarts) in a heavy bottomed pot or Dutch oven to 350°F (176°C). Cut the lamb steaks (1 lb) into 1 inch cubes. Place about 4 cubes of meat onto each skewer.

  2. On a wire rack-lined baking tray, season the lamb skewers with salt ( to taste) and pepper ( to taste) to taste.

  3. Working 3 skewers at a time, place the skewers into the hot oil (2 quarts) and fry until golden brown.

  4. Remove the cooked skewers from the oil (2 quarts) and drain on a wire rack-lined baking tray.
