Crispy Potato Skins

  1. Preheat the oven to 425°F. Use a fork to poke holes into the potato (3 large).

  2. Brush the potato (3 large) with olive oil and season with kosher salt and pepper. Once seasoned, place the potato (3 large) onto a wire rack lined baking tray.

  3. Place the tray into the oven and cook the potato (3 large) for 40-60 minutes. The potato (3 large) should be crispy on the outside and fork tender on the inside.

  4. Remove from the oven and let cool until potatoes (3 large) are easy to handle. Using a knife, cut the potatoes (3 large) in half lengthwise.

  5. Using a spoon, scoop the flesh out of the potato leaving a 0.25 inch thick shell. Brush the inside and outside of the potatoes (3 large) with melted butter (2 Tbsp).

  6. Place the potatoes (3 large) on a half baking tray, then place the tray into the oven and bake for 15 minutes, or until crisp.

  7. Place cheese (½ cup) and bacon (3 slices) into the potato and bake for 5-7 minutes. The cheese should be melted and starting to brown.

  8. Pull from the oven and garnish with green onion (½ bunch). Serve with sour cream.
