Colombian Salt Crusted Potatoes

  1. Place potatoes (2 lb) in a medium sauce pot, and cover with waterwater. Bring the water to a boil over high heat. While the water is coming to a boil add salt (½ cup) and stir to dissolve.

  2. Once the water comes to a boil, reduce the heat to a simmer, and cook the potatoes (2 lb) until all of the liquid has evaporated, about 5 minutes.

  3. Let the potatoes (2 lb) rest in the pot for about 5 minutes, then toss in the pan and serve.
