Directions
Burger
In a large bowl, mix together the ground beef (4 oz), onion (¼), garlic (2 cloves), paprika (½ tsp), cumin (½ tsp), salt (1 tsp), and pepper (½ tsp) until well combined.
Shape the beef (4 oz) into a thin patty, about 0.25 inch
Heat a grill pan or skillet over medium-high heat. Add the patty and cook for about 4-5 minutes per side, or until it is cooked to your desired level of doneness.
Potato
Peel potato and use a mandolin to cut the potato into 0.125 1-inch slice. Use a sharp knife and cut into sticks 0.125 inch. Place potatoes into a bowl of water.
In a small sauce pot, heat 1 quart of vegetable oil to 350°F.
Drain potato on a paper towel and carefully add to the hot oil.
Remove the potato sticks when they are golden. Drain on dry paper towels.
Add kosher salt to taste.
Assembly
Toast buns (1).
Place the bun (1) heel on plate.
Put the patty on top of the bun (1) and top with potato sticks and ketchup. Finish with the top half of the bun (1).
